TOP 10 LIST OF STEAMBOAT BBQ's MOST POPULAR ITEMS: #2 Beef Brisket I've been asked " how do you make such good brisket?" My answer " by making a lot of bad brisket!" Brisket was one meat I always struggled with when I was trying to figure out how to cook it properly and unlike today, there really wasn't much shared information out there to source in trying to figure it out. So it was a lot of fires, a lot of time and a lot of overcooked and under cooked attempts until I was able to get a finished product I was happy with. Today my brisket or beef rub has 8 ingredients in it including one that I added to the list when I cooked some tri-tip with a friend from Oakland, CA. At one time my beef ingredient list included 22 spices. As with all of our meats, we try to start with quality cuts. #SteamboatBBQSmokedMeats #WichitaPacking #LesscanbeMore
May was amazing! It's been a bit since I have shared some of the goings on around here so I think now is a good time. We have been hard at it. May ended up being our busiest month to date. Sometimes when you are caught up in it, you really don't realize how much is getting done and how hard the people around you are working. It's when you come up for air and have a minute to reflect you recognize what just went down. Here is my May recap: We catered 126 orders which included 4 weddings, 8 graduations, 6 hog roasts and 2 retirement parties. We hit the competition trail for some action to include KCBS back-to-back competitions in Appleton, WI and Westmont, IL and sandwiched in the middle a week long trek to the World Championship BBQ Competition at Memphis in May where we finished a respectable 12th place in the Whole hog category. We are thrilled about that, but we (the cook team) know we left points on the table, or should I say not in the blind box. In the restaurant we fulfilled 6132 tickets an average of nearly 200 tickets per day. Record totals while staff battled thru daily intermittent service interruptions on our phone and internet due to faulty equipment on the providers network (maybe the most amazing testament to our employees and customers).
